These were inspired by some cream cheese stuffed French toast with bacon, but since that’s not keto, I tried crepes instead.
Now don’t get me wrong, these still came out good, and I still ate it for breakfast. The only problem was that it wasn’t Instagram ready. Well also the texture and thickness weren’t the same as crepes.
For the next time, I’ll probably find a recipe to follow to get it right.
The cinnamon sugar cream cheese with bacon is something I always have, so that part came out the way I was expecting.
But I never tried making crepes before, and that’s where things went sideways. Below I have measurements of what I did, so that’ll be a good way to see what not to do.
I’ve said it before, but the point of this channel is to show some of the things you can have on a keto & low carb diet. So even if I mess up, if the cameras are set up, I’ll still put it out.
Cinnamon Sugar Cream Cheese Crepes with Bacon
What I Used:
- bacon (4 slices)
- vanilla protein powder (zero carb – 2 scoops)
- flax milk or any nut milk (unsweetened – 1 cup)
- eggs (4)
- stevia concentrate (10 drops)
- vanilla extract (1/8 tsp)
- coconut flour (1/2 cup)
- cream cheese (4 oz)
- powdered Swerve (2 tbsp)
- cinnamon (1-1/2 tsp)
- butter
What I Did:
Starting off with the pork and cabbage that will be the base for each, I cut up the boneless pork ribs into small pieces.
Then in a bowl, seasoned and marinated the pork with salt, garlic powder, pepper, ginger paste, chili garlic paste, soy sauce, and Worcestershire sauce. (marinate for at least 1 hour, up to overnight)
In a skillet with avocado oil, placed the pork in until cooked through. Then cooked the rainbow slaw in the same pan after taking the pork out and adding a bit more oil.
Once there is no longer a raw vegetable taste, I mixed it in with the cooked pork.
In a Bowl with Cauliflower Fried Rice
In the same pan that the pork was cooked in, I added in a bit more avocado oil, then the cauliflower rice. Then added the soy sauce and a little salt. Because it is the same pan, it should pick up a lot of flavors from cooking the pork.
The egg can be 1 of 2 ways. The first is scrambled into the cauliflower rice as if it was fried rice. The second way is what I did, which is to hard boil the egg for 8 minutes.
To serve, put the rice, pork and egg into a bowl.
