I have this pudding pretty much daily. Every week I will meal prep two versions of this.
Two chocolate, and two cinnamon maple. I have other flavors in the works, like triple berry or a coconut kind of thing. But those aren’t ready for primetime yet.
Now, time to get a little uncomfortable.
Whenever you are starting a keto, you might find that… how do I say this politely… during your trips to the bathroom, things are either plugged up or going through you a little too smoothly (wink wink).
And for many people, its one or the other. There is no in between.
I’ve been there and what I found to work is incorporating more chia and flax seeds into your morning routine.
For chia I have this pudding. And for flax I might make a keto pancake using protein powder and flax meal (recipe coming soon) or a triple chocolate muffin that I’m pretty close to getting just right.
It might be a little early to get so personal, but hey, how else are we going to get to know each other.
This recipe comes from my days of trying to be vegan. Even though that never stuck, this recipe did.
Enough of that, on to the recipe.
Chia Seed Pudding
Ingredients
- 3 cups flax milk or any unsweetened nut milk
- ½ cup almond butter
- ½ cup chia seeds
- ¼ tsp vanilla extract for chocolate version
- ¼ tsp maple extract for cinnamon version
- 1 tsp cinnamon
- 1 ½ tbsp cocoa powder
- ½ tsp liquid stevia
Instructions
- Combine milk, almond butter and sweetener into container.
- If making only one flavor, you can also add the cinnamon or cocoa powder, along with the extract. Keep the chia seeds out for now.
- Blend ingredients together until smooth.
- If making two flavors, pour into two separate containers. I use a shaker cup to make it easier.
- Add the cinnamon and maple extract along with half the chia seeds into one container. And the cocoa powder and vanilla extract with the other half of the chia seeds into the other.
- Shake or mix very well.
- You can leave them batched like this or pour into the individual containers you will be using throughout the week.
- Place them in the fridge overnight so that the chia seeds can fully absorb the mixture.
- Morning of, you can top with a handful of berries or keto friendly nuts.
