These are easy enough to make for yourself really fast, or fancy enough to impress some other people with. These are full of healthy fats and perfect a ketogenic diet. The cabbage with spring mix and spinach base turn this into a full salad and meal.
What I Used:
- Red cabbage (shredded)
- ½ red onion (diced)
- Olive oil
- Salt, pepper, garlic powder, roasted garlic powder, smoked paprika
- Crab meat
- Diced tomatoes
- 3 avocados
- Juice of a ½ a lime
- Mayo (2-3 tbsp)
- Spring mix with spinach
- Cheddar cheese
- Sriracha
What I Did:
I started by prepping the red cabbage and onion, then put it in a parchment lined tray. Covered in olive oil along with salt, pepper, and garlic powder.
Shook it up and placed it into the oven, preheated to 350 for 20 minutes.
Next up, I started with the crab mixture. Putting the crab into a bowl and seasoning with salt, pepper, roasted garlic powder, and smoked paprika. Then added the juice of half a lime, along with 2-3 tablespoons of mayo.
For the avocados, cut them in half and took out the seed. Then in the hole, scooped in the crab mixture.
By now, the cabbage was ready. Combined it with the spring mix and spinach. Portioned it out into an oven safe dish and placed the stuffed avocados into each. Topped with a sprinkle of cheddar cheese.
Back into the oven everything went. This is only to melt the cheese, so about 5-7 minutes.
And that’s about it, drizzled some sriracha on top to finish before serving.
